Our philosophy
Our meticulous and demanding work pays homage to the centuries-old work of the monks who preceded us.
Our oenological style is an ode to freedom. Taking into account the particularities of our different terroirs, sublimating plots where the vine has been worked for a thousand years like the Clos, or the Vieilles Vignes des Bouveries drives us at every moment. By having a living vine, and by taking into account the specificities of each plot, an intrinsic coherence to all of our vintages appears.
We work mainly with small thermo-regulated vats that allow us to respect the traceability of grape varieties and plots. A few tuns complete this.
Protected from light, with the perfect degree of humidity, the bottles remain in the monks' cellars for a long maturation period, of at least five years.
The stirring and disgorging of our single-plot vintages is done manually.
